It takes 40-50 gallons of sap to make 1 gallon of maple syrup.
One taphole in a tree will yield 10 gallons of sap and will condense into 1 quart of maple syrup when boiled.
It does not hurt the tree to take sap. A 15" diameter tree will produce 150 gallons of sap every day. We only take 10 gallons of sap per tap from that tree during the whole season.
One of every four trees in Northern New England is a sugar maple.
Real maple syrup is delicious used in receipes. It can be used in place of any sweetener. Use 3/4 cup of Pure Maple Syrup to replace 1 cup of sugar in any receipe and reduce the liquid in the recipe by about 3 tablespoons for every cup of syrup used.
